This Japanese dish has enjoyed great success around the world and we want to launch our blog with tips and wine recommendations for pairing this delicacy.
Before starting, it is worth remembering that each person is unique and as they say, “to each his own”. What we are going to share are general tips to guide the choice a little, but logically, we should choose the wines that we most enjoy. The marvellous thing about the world of wine is that the options are endless. There is a wine to suit everyone and a moment to suit every wine.
Having said this, for this dish created mainly from raw fish, we recommend smooth and fruity white wines or drier white wines with a good structure. Within these styles, the white wines produced with varieties such as Sauvignon Blanc, Chardonnay, Picapoll, Xarel-lo, White Garnacha and Albariño are ideal for accompanying sushi.

- Abadal Picapoll. Produced 100% with Picapoll (a native variety of Pla de Bages) aged for 3 months on lees.
- Auzells Blanc. Produced with Macabeu, Sauvignon Blanc, Chardonnay, Riesling and Albariño. Aged on lees for 3 months (10% in barrels).
- Bancal del Bosc Blanc. A young wine made 100% using white Garnacha.
- Cara Nord Blanc. Macabeu, Chardonnay and Trepat aged on lees for 3 months.
- Ikigall. A project by David Seijas (Former sommelier at El Bulli). Produced using 85% Xarello, 10% Malvasía de Sitges and 5% Moscatel.
- Manar dos Seixas. Also by David Seijas, this is a wine produced with 81% Treixadura, 10% Albariño, 8% Godello and 1% Loureiro Blanco.
